LOW CARB HIGH PROTEIN
Grilled Chicken Spinach Wrap
SERVINGS: 1
INGREDIENTS
+ 2 cups of fresh baby spinach
+ 2 whole eggs
+ Pinch of sea salt
+ Pinch of black pepper
+ 4 oz Grilled Chicken
+ 1 sliced Campari tomato
+ 1/2 cup mixed greens
+ 1/2 avocado
DIRECTIONS
+ Preheat oven to 350
+ In a blender, mix 2 cups of spinach and 2 eggs plus the sea salts and pepper until blended.
+ Line a baking sheet with parchment paper and pour the contents into the baking sheet.
+ Bake for 15 minutes or until cooked.
+ Take out of the oven and let cool. While it's cooling, chop up lettuce, tomato, avocado and protein of choice.
+ Once cool, place the spinach "wrap" on a plate, add in the lettuce, tomato, avocado and chicken. Roll it and enjoy!
