Homemade Pasta

SERVINGS: 4

INGREDIENTS
+ 1 1/2 cup All-purpose Flour
+ 1/2 tsp Kosher Sea Salt
+ 2 Large Eggs Plus 1 Egg Yolk
+ 1 tsp Olive Oil
+ 1 tbsp water (plus more if needed)

DIRECTIONS
+ Place 1 cup flour and salt in a stand mixer to combine.
+ Add in the eggs, egg yolk, and olive oil and mix until the dough comes together to form a ball.
+ Turn the dough out onto a slightly floured surface, gradually kneading in the remaining 1/2 cup flour by hand. The dough should be smooth, not sticky.
+ If sticky, add 1 tsp of dough in at a time until smooth.
+ Wrap the dough in plastic and set aside to rest for 20 minutes.
+ Boil a pot of hot water.
+ Lightly flour a large work surface.
+ Break off 1/3 of the dough, sprinkle it lightly with flour and pass it through the flat edge of a pasta machine to flatten to the thickness you desire. Then pass through a spaghetti or linguini setting.
+ Repeat with the other 2/3. Cut the pasta into 12-inch lengths and boil in hot water.
+ Top with fresh garlic, olive oil, fresh broccoli, and grilled chicken for a high protein, delicious meal.
